Learning Ramen in Japan
Raul, the eldest brother, traveled to Japan to pursue his dream of opening a ramen restaurant. He began his journey as an unpaid dishwasher, waiting years before he was allowed into the kitchen. Spending a total of 16 years in Japan, Raul learned that ramen is more than just food; it is an art form rooted in patience, precision, discipline, and respect for tradition.
Starting Life in the UAE
Meanwhile, Karl moved to Dubai in 2006 to seek career opportunities, starting with a monthly salary of AED 1,800. Nicolai joined him a year later. Life in a new country presented financial, cultural, and professional challenges, but these experiences taught them adaptability, humility, and perseverance.
The Birth of a Family Brand
The three brothers eventually transformed their shared passion for Japan into a family business, launching IchiRyu Ramen House in the UAE. Their goal was not merely to sell Japanese food, but to blend the authenticity of Japanese ramen with the warmth of Filipino hospitality.

Adapting Japanese recipes for the Middle Eastern market was no easy task. Raul had to adjust ingredients, flavors, and preparation methods to suit the region without compromising the ramen’s authenticity. The brothers also learned the importance of separating personal emotions from business decisions within a family-run enterprise.

Today, IchiRyu Ramen House has opened its flagship branch in Japan, the very country that inspired the brothers during their childhood. For them, this opening is more than just a brand expansion; it represents the completion of a journey that began with their father’s voice, flourished in the UAE, and has now returned to Japan.
